Sugarcane juice, yerba maté, lime, lemon verbena, lemon balm, vanilla bean
Ingredients and method
1 cup of sugarcane juice
juice of 1 lime
Zest of a whole lime
1 tbsp of crystalised sugar
20 g Chimarrão (brazilian yerba maté)
10 leaves of fresh lemon verbena
10 leaves of fresh lemon balm
1/2 vanilla bean
Zest the lime. Add to the mortar with the sugar and crush with pestle. Add the herbs and keep crushing until you get a green aromatic paste. Add one tablespoon of boiling water and let infuse.
Meanwhile weigh 20g of maté and cover with 30ml of cold water. Mix to form a paste. Add 70ml of boiling water and let infuse for 10 minutes.
Filter maté brew over the aromatic paste and stir. Then filter this green liquid over the frozen sugar cane juice and stir. Add lime juice to taste.
